Berry Rice Krispies Bars with No Churn Cookie Berry Ice Cream

Ingredients

Berry Rice Krispies Bars

  • 3 cups rolled oats
  • 2 cups brown sugar
  • 1 cup coconut oil (or butter)
  • 3 eggs
  • 1 tspn baking powder
  • 1/2 tspn baking soda
  • 1/2 tsp salt
  • 3 cups Kellogg's Original Rice Krispies Cereal
  • 1 tbsp each dried blackberries and dried strawberries

No Churn Cookie Berry Ice Cream

  • 1 can condensed coconut milk or regular condensed milk (11.25 oz)
  • 1 can coconut milk (13.5 oz)
  • 2 tbsp smashed strawberries or strawberry puree
  • 2 tbsp smashed blueberries or blueberry puree
  • 3 Keebler Chips Deluxe Rainbow cookies crumbled up

Instructions

Berry Rice Krispies Bars

  • Preheat oven to 350 degrees
  • Line a 9x13 baking tray with parchment paper 
  • Add oats, brown sugar, coconut oil, eggs, baking soda and baking powder, and salt into a blender and pulse till well incorporated and creamy.
  • Using a spatula, stir in Kellogg's Original Rice Krispies Cereal and dried strawberries and dried blackberries.
  • Spoon into baking tray and bake for 20 minutes.
  • Let cool and then cut into squares and serve with No Churn Cookie Berry Ice Cream

No Churn Cookie Berry Ice Cream

  • Add coconut condensed milk and coconut milk into a bowl and using an electric handheld mixer, mix well. 
  • Pour into a freezer safe container and drizzle in the smashed strawberries or strawberry puree as well as the smashed blueberries or blueberry puree.
  • Crumble the Keebler Chips Deluxe Rainbow cookies into mix and freeze overnight or at least 5 hours and enjoy with Berry Rice Krispies Bars, sliced strawberries and blueberries.
