These gluten and dairy free, super fudgy, Chocolate Breakfast Bars are an easy and sneaky way to get more greens into your diet! Enjoy them with a glass of milk or coffee, for breakfast or dessert!
- 10 medjool dates soaked in warm water for 10 minutes
- 2 eggs
- 2 scoops • Amazing Grass® Green Superfood® Original
- ¼ cup cocoa
- ¼ cup almond flour
- 3 tbsps. coconut oil
- ¼ cup coconut flakes unsweetened
- ½ tsp cinnamon
- ¼ cup dark chocolate chips or good quality chocolate to melt and top bars with + extra coconut flakes + almond flakes optional
Preheat the oven to 375 F
Add the eggs and dates to a food processor or blender and blend till dates have disintegrated.
Add dates/egg mixture to a bowl and add in the almond flour, Amazing Grass, cocoa powder, cinnamon, coconut oil and coconut flakes and mix well.
Spoon mixture into a parchment lined baking tray and bake for 20 minutes.
Remove from the oven and let cool.
When cooled, melt the chocolate (I microwaved the chocolate in a microwave safe bowl for 30 seconds. Then stirred it and microwaved it again for another 25-30 secs) Drizzle the melted chocolate onto the top of the bars.
Top the chocolate topped bars with extra coconut flakes and almonds and enjoy.
