Flourless Peanut Butter Chocolate Cookies are transformed into decadent Ice Cream Sandwiches, sandwiching Haagen Dazs Non Dairy Ice Creams and being dipped into a variety of chocolate dips!

Ingredients

For the flourless peanut butter chocolate chip cookies:

  • 2 cups peanut butter
  • 1 ¾ cup brown sugar
  • 2 eggs
  • ¼ cup oat flour
  • 1 cup semi sweet chocolate chips/chunks

For the Peanut Butter Chocolate Cookie Ice Cream Sandwiches:

  • 14 Peanut Butter Chocolate Cookie Ice Cream Sandwiches
  • Häagen-Dazs® Non-Dairy Chocolate Salted Fudge Truffle
  • Häagen-Dazs® Non-Dairy Peanut Butter Chocolate Fudge
  • Häagen-Dazs® Non-Dairy Coconut Caramel
  • ¼ cup White chocolate chips optional
  • ¼ cup Milk chocolate chips optional
  • ¼ cup Dark chocolate chips optional

Instructions

For the flourless peanut butter chocolate chip cookies:

  • Place peanut butter, brown sugar, eggs, and oat flour in a bowl and mix well until dough doesn’t stick to the bowl.
  • Add in semi sweet chocolate chips/chunks and mix well.
  • Form into 14 balls.
  • Place balls on a parchment lined baking tray and bake at 375 degrees for 10 minutes for soft or 15-18 minutes for firmer cookies.
  • When done, let cool before making ice cream sandwiches.

For the Peanut Butter Chocolate Cookie Ice Cream Sandwiches:

  • Place scoops of Häagen-Dazs® Non-Dairy Chocolate Salted Fudge Truffle, Häagen-Dazs® Non-Dairy Peanut Butter Chocolate Fudge, and Häagen-Dazs® Non-Dairy Coconut Caramel on 7 of the cookies. Cover with the other 7 cookies.
  • Place White chocolate chips, Milk chocolate chips and Dark chocolate chips in separate microwave safe bowls and microwave in 30 second intervals, until chocolate is melted (took me 2, 30 second intervals and mixing between each interval to get the chocolate melty). Dip half the ice cream sandwich into melted chocolate and set on plastic until set and enjoy!
  • *Can be wrapped in plastic, placed in an airtight container and stored in the freezer for up to 10 days.
