For The Grilled Pineapple Salsa

  • Peel and chop the onion, wash and chop the tomatoes, pineapple and cilantro and place in a bowl
  • Toss well
  • Season with salt and pepper and serve on top of grilled slices of Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin.

For The Cabbage

  • Chop onion and add to a pan with olive oil. Let onion saute, stirring a few times, for about 10 minutes while pork is grilling.
  • Chop cabbage and add to the onions along with diced garlic and let simmer about 5 minutes.
  • Season with salt and pepper (and cilantro - optional) and enjoy with grilled Smithfield Marinated Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin and grilled pineapple salsa.
