Peel and chop the onion, wash and chop the tomatoes, pineapple and cilantro and place in a bowl

For The Cabbage
Chop onion and add to a pan with olive oil. Let onion saute, stirring a few times, for about 10 minutes while pork is grilling.
Chop cabbage and add to the onions along with diced garlic and let simmer about 5 minutes.
