Split Pea Stew

Ingredients

  • Olive oil
  • 2 onions chopped
  • 4 pieces of fresh turmeric
  • 6 cloves of garlic
  • 1 one inch piece of ginger
  • 1/2 cup of yellow split peas
  • 1/2 cup of green split peas
  • Tikka Masala sauce or can sub 1 can coconut milk, 1 teaspoon garam masala, 1 teaspoon cumin, 1 teaspoon chili powder
  • 1 1/2 cup water
  • 3 tomatoes chopped
  • 2 carrots sliced
  • Salt and pepper to taste

Instructions

  • Saute onions in olive oil till slightly golden
  • Add in garlic, turmeric and ginger
  • Add in split peas, water, tikka masala (or substitutions) and let simmer on low for 30 minutes
  • Add in the tomatoes and carrots and let simmer for another 10 minutes
  • Serve and enjoy!
