Easy Turmeric Lime Cod

Have dinner on your table in minutes with these fresh Alaska Cod fillets that are flavored with charred, honey-drizzled, lime and a handful of spices. Pair with greens for a light meal or with grains and greens for a heartier option.

Ingredients

  • 2 limes
  • 1 tbsp honey
  • 1 lb Alaska Cod
  • 1/2 tsp ginger freshly grated
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • parsley to garnish with
  • 2 tbsp olive oil

Instructions

  • Place 1 tbsp of the olive oil in a pan over medium heat. Slice up one of the limes, and when pan is warm, add lime slices, drizzle with a little of the honey, and saute about 5 minutes on one side, then flip, drizzle with rest of the honey, and saute another 4-5 minutes on the other side (please note cooktops and temperatures vary, so please check to make sure your lime slices don't burn)
  • Push the charred lime slices to the sides of the pan and add the other tbsp of olive oil.
  • Rub the Alaska Cod fillets with the turmeric, cumin and smoked paprika, spoon the freshly grated ginger over them (or you can sprinkle/spoon them on when fillets are cooking in the pan), slice them into individual servings and saute about 4-5 minutes on one side. Squeeze about a teaspoon of lime juice on them (from the other lime). And, repeat on the other - sauteing about 4-5 minutes as well.
  • Season with a pinch of salt and pepper and garnish with parsley. Serve on a bed of greens (like I did) or serve with greens and grains.
