This easy Lemon Sesame Vegetable Saute With Green Giant Veggie Spirals would be a delicious side dish, or, if you are like my daughter, a delightful dinner all on its own!
- 2 tbsp olive oil
- 1 red onion diced
- 1 lemon sliced
- 2 tbs vegetable stock optional
- 3 cloves garlic diced
- 1 tsp smoked paprika
- 2 cups Green Giant® Zucchini Veggie Spirals frozen
- 2 cups Green Giant® Carrot Spirals frozen
- 1 cup peas frozen
- 1 cup corn frozen
- 1 tbsp black sesame seeds
- salt and pepper to taste
- parsley to garnish with
Add olive oil to a pan over medium heat.
Add onion to the pan and saute for about 15 minutes, stirring often.
Then add in the lemon slices and let saute about 5 minutes on each side. (*if the lemon slices or onion stick to the pan, just us a little bit of the vegetable stock to deglaze the pan and get all that flavor up into the veggies.
Then add in the Green Giant® Zucchini Veggie Spirals, the Green Giant® Carrot Veggie Spirals, the frozen peas and frozen corn and cook uncovered for 10 minutes or so, until any liquid has been evaporated and the veggies are heated throughout.
Season with salt and pepper, garnish with parsley and enjoy as a side or main.
