White Chocolate Drenched Sweet Potato & Raisin Bites

Moist and totally decadent bites naturally sweetened with wholesome raisins!

Ingredients

  • 1 baked medium sized sweet potato I baked mine for about 45 minutes so it was extra soft
  • 1 egg
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • dash/pinch of salt
  • 1/2 cup California Raisins
  • 1/2 cup California Golden Raisins
  • 1/4 cup + 1 tablespoon coconut oil melted
  • 1/2 cup oats
  • 1/2 cup white chocolate chips

Instructions

  • Preheat oven to 375
  • Toss California raisins and golden raisins into a blender/food processor and blend till they are almost like a "mash" %http://savoryspin.com/wp-content/uploads/2014/11/raisins-150x150.jpg
  • Toss in sweet potato and egg and blend well
  • Using a spatula or spoon, fold in the spices, salt, 1/4 cup coconut oil and oats (can be done in blender/food processor or in another bowl)
  • The mix will be wet - I greased my hands with coconut oil and formed mix into bites
  • Bake bites for 20 minutes
  • Let cool
  • Melt 1 tablespoon coconut oil and white chocolate in a pan and drizzle onto cooled bites
  • Let white chocolate harden before devouring
  • Bites can be stored for upto 4 days in the fridge in an airtight container
