Pre heat oven to 375 degrees
While oven is preheating, chop onions, garlic and tomatoes
Add onions to a pan with a generous splash of olive oil and saute till they begin to become translucent over a medium flame - stirring frequently.
Add in garlic and tomatoes and salt and pepper to taste and saute about five minutes
Meanwhile, cut a "lid" off the bread boule, then scoop out the inside a bit.
Rub entire boule with olive oil
Spoon in the onion tomato mix into the boule and top with the cheese
Place boule in oven for 15-20 minutes till cheese is bubbly
Sprinkle with chopped chives and enjoy warm
