Easy Bean Pumpkin Curry

Ingredients

  • 1 red onion chopped
  • 3 cloves garlic chopped
  • 1/2 tsp fresh grated ginger
  • 1 cup coconut milk
  • 1 cup pumpkin puree
  • 1 cup vegetable stock
  • 1 bunch extra long beans ends chopped off and cut
  • 2 tsps garam masala
  • 1 tsp corander
  • 1/4 tsp salt or more according to taste
  • 1/2 TSP black pepper
  • 2 tbsp olive oil

Instructions

  • Add olive oil to a pan (on a medium flame) and then add in the chopped onion and let cook, stirring a bit for about 5 minutes.
  • Add in the garlic, ginger, coconut milk, pumpkin puree, vegetable stock, green beans, garam masala, coriander, salt and pepper and stir till well incorporated. Then, let simmer uncovered, for about 10-12 minutes - till sauce has thickened.
  • Serve warm with naan, paratha or rice.
