On those cold, rainy, weekend mornings, my daughter and I love to enjoy a stack of these 8-ingredient, gluten free, Easy Chocolate Oatmeal Pancakes with Chocolate Sauce and Chocolate Whipped Cream paired with a cup of antioxidant-rich, Life Extension®’s Coffee, while indulging in yet another Netflix marathon!

Instructions

  • Place oats in blender and blend till flour-like, then add to a bowl. Also add in the cocoa, baking powder and salt to the bowl and mix well. Then add in the vanilla, coffee, sugar (optional), almond milk and eggs and mix well. Let sit for 5 minutes to thicken. While waiting, place a pan over a low-medium flame and let it warm.
  • When pancake mixture is thickened, grease pan with vegan butter and ladle 2-3 tablespoonfuls of mix onto pan, and cook 2-3 minutes on each side.
  • Serve pancakes with fruit, chocolate sauce* and chocolate whipped cream** and a steaming mug of Life Extension® Rainforest Blend Coffee!
  • *The chocolate sauce is made with a handful of semi sweet chocolate chips, a tablespoon or two of brewed Life Extension® Rainforest Blend Coffee and a splash of milk. 
  • **The chocolate whipped cream is made with a couple of teaspoons of cocoa, a couple of teaspoons of sugar and dairy free whipped cream blended together.
