Easy Banana Pecan Pancakes

Enjoy conversation and the camaraderie of your family and friends as y'all gather around the breakfast table with a stack of these gluten free, cardamom spiced, Easy Banana Pecan Pancakes and steaming mugs of coffee.

Ingredients

  • 1 cup rolled oats ground up
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cardamom
  • 3/4 cup Hood Calorie Countdown 2%
  • 1 egg
  • 1/2 banana mashed up
  • 1/4 cup pecan bits
  • 1 tbsp honey

Instructions

  • First off, add the rolled oats to a blender and blend till they resemble a flour-like consistency. Then spoon them into a bowl
  • Also to the bowl, add in the baking powder, salt, cardamom and whisk together. Then add in the Hood Calorie Countdown, honey  and egg and whisk till well incorporated. Fold in the mashed banana and pecan bits with a spoon and set mixture aside for 7-10 minutes to thicken up.
  • While waiting, place a pan over a low-medium flame and let it warm.
  • When pancake mixture is thickened, grease pan with butter and ladle 2-3 tablespoonfuls of mix onto pan, and cook 2-3 minutes on each side, till golden and that golden ring forms around the circumference of the pancake.
  • Serve pancakes with whipped cream, sliced bananas, and golden syrup or maple syrup and enjoy!
