Super easy and quick, these Waffle Pizzas are made by toasting Van’s® Gluten Free Ancient Grains Waffles are topping them with a sautéed mix of kale, broccoli, onion, sundried tomatoes, mushrooms and olives. Enjoy these for dinner or top them with a fried egg and enjoy these for a leisurely weekend breakfast.

Ingredients

  • Your favorite Van’s® Waffle
  • 2 tbsp oil
  • 1 red onion peeled and chopped
  • 1 cup kale chopped with stalks removed
  • 1 cup chopped broccoli
  • 2 tbsp sundried tomatoes
  • 2 tbsp canned mushrooms
  • 2 tbsp sliced black olives

Instructions

  • Sauté chopped red onion with olive oil for 12-15 minutes over a medium flame, until the onion begins to brown.
  • While the onion sautés, remove the stalks from the kale and chop up approximately a cup of kale and approximately a cup of broccoli florets.
  • Add the kale and broccoli to the pan with the onion.
  • Then, roughly measure out a couple of tablespoons of sundried tomatoes, canned mushrooms and canned black olives and add them to the greens and onion. Mix everything well and remove the pan from the heat.
  • Top some toasted Van’s® Waffles with the greens, olives, sundried tomato and mushroom mix. If you would like, garnish with parsley and chili flakes and enjoy for a quick and easy dinner idea. Or, top with a fried egg and enjoy for a leisurely weekend breakfast with a big cup of coffee.
