This Easy Berry Galette is a rustic, rich, and delectable dessert that thrives on imperfection. With a 3-ingredient crisp crust with undertones of maple and caramel, this berry tart is ideal for any occasion.

Ingredients

For the crust

  • 1/2 cup all purpose flour
  • 1/4 cup almond butter I used Georgia Grinders Maple Caramel Almond Butter
  • 4 tbsp cold water
  • Pinch of salt

For the Berry Filling:

  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • 3 tbsp brown sugar
  • 1/2 tsp cinnamon

Additional Ingredients:

  • 1 tbsp coarse sugar to dust galette
  • 1 beaten egg for egg wash

Instructions

  • Preheat oven to 375 degrees
  • Add the AP flour, almond butter, salt, and cold water to a bowl and mix well with a spoon. When ingredients are well incorporated, using your hands, kneed dough a couple more minutes.
  • Then place dough on a lightly floured silpat placed on a baking tray (I simply fill it and bake it on this same tray so the dough does not break) and roll it out using a rolling pin until it's about 1/10th of an inch or so and set aside.
  • Make the filling by placing all the berries, the cinnamon, and the brown sugar in a bowl and mix well.
  • Then, spoon berry filling onto the galette dough and spread it out to about an inch away from the edges. Fold over the edges. Brush egg wash over the folded edges, sprinkle a bit of the coarse sugar on the edges and place the baking tray with berry galette in a 375 degree oven for 30-35 minutes or until galette is golden.
  • Remove the galette from the oven and let it sit about 15-20 minutes.
  • Enjoy with non dairy shipped topping or ice cream!

Notes

You can avoid having a too fruit-juicy galette by using only blueberries. They are naturally high in pectin which helps a blueberry filling set well.
With this said, if you use strawberries, then dust them with some cornstarch and make sure to sprinkle a bit of breadcrumbs on the rolled out galette dough before adding in the fruit filling.
