This Melon Salad with Feta is such a tantalizing variety of textures and flavors. Refreshingly sweet and salty, crunchy and creamy, this salad is perfect for summer!

Ingredients

  • 1 pkg butter lettuce
  • 1 pkg hearts of romaine
  • 1 cup chopped melon s – I used a chopped up some Galia, Hami, Canary, and Orange Honeydew melons for this salad.
  • ¼ cup pecans
  • ¼ cup black olives sliced
  • ¼ cup feta cheese
  • ¼ cup sliced figs
  • Dressing of your choice
  • Micro greens to garnish optional

Instructions

  • Add Butter lettuce and Romaine lettuce to a bowl.
  • Then add in the pecans, black olives, melons, and figs and toss well.
    *You can use fresh melons for this recipe, or you can grill the melons and then use the grilled melon in this salad after the pieces cool down, so they don’t wilt the lettuce. To Grill The Melons, chop into slices about 1/4 inch thick. Then, place in heated grill and grill on one side for about 4 minutes, then flip and grill 4 more.
  • Serve onto plates, drizzle with feta.
  • Garnish with micro greens (optional)
  • Enjoy with your favorite salad dressing or enjoy as is.
