Easy Black Bean Golden Beet Sauté

This aromatic Easy Black Bean Golden Beet Sauté is a tasty side dish that is ever so slightly sweet and spicy. Served over quinoa or rice, it is a satisfying and nutritious meal.

Ingredients

  • 3 tbsp olive oil
  • 2 golden beets
  • 3 celery stalks
  • 1 medium/large yellow onion
  • 4 garlic cloves
  • 1 inch chunk of fresh ginger
  • 2 tsp coriander
  • 3 tbsp maple syrup
  • 1 tsp smoked paprika
  • 1 tsp cayenne
  • 1 tsp chili flakes
  • 1/4 cup water
  • salt and pepper to taste
  • 1 15.25 oz can of black beans
  • OPTIONAL: 1/4 cup walnuts
  • OPTIONAL: 2 tbsp parsley

Instructions

  • First off, peel the onion, ginger, and garlic and chop them up nicely.
  • Add the olive oil to a large skillet over medium heat and add onions, ginger, and garlic. Let this sauté for about 5 minutes.
  • Rinse the celery and dice the stalks.
  • Peel the beets and slice them into bite-sized pieces.
  • Toss the celery and golden beets into the sautéing onions, ginger, and garlic.
  • Also, add in the maple syrup, coriander, smoked paprika, cayenne, chili flakes, and water, and stir until all ingredients are well combined.
  • Cover the pan and let ingredients cook for about 15-17 minutes.
  • Remove the cover and check the beets. At this point, they should be almost fork tender.
  • Open the can of beans and drain the liquid out. Then rinse the beans using a collander, or in the can. Add them to the other ingredients.
  • Let this sauté for about 3-5 more minutes, or until all the liquid evaporates.
  • Turn off the stove when the beets are fork-tender and the liquid is evaporated, and season with salt and pepper to taste.
  • Serve garnished with chopped parsley and walnuts.

Notes

*Do keep in mind that all stoves vary in temperature. I use a gas stove and at a medium heat setting, it does not burn the ingredients and cooks this dish in less than 30 minutes.
