Add the chocolate chips and coconut oil to a large microwave-safe bowl.
Place this bowl in a microwave and microwave for 30 seconds on high. Remove the bowl from the microwave and if the chocolate chips are melted, mix the melted coconut oil and chocolate chips until they are well incorporated. You can check to see if the chocolate chips are melted by running your spatula through them. If they easily mix with the coconut oil, you are good to mix away.
If the chocolate chips are not melted, then place the bowl back in the microwave and microwave for another 10 seconds. Remove and check to see if melted. Repeat until you can easily mix the chocolate and coconut oil together.
Then, using the spatula, fold the cool whip into the melted chocolate mixture. Fold until all ingredients are well incorporated.
Divide this chocolate mousse between 3 individual bowls.
Serve as is or decorated with chopped chocolate and/or melted chocolate.
This mousse can be enjoyed at room temperature or chilled.
