Gluten Free Chocolate Chip Pecan Cookies are great for an afternoon snack or lunchbox treat. So, so good

Ingredients

  • 1/2 cup Peanut Butter
  • 2/3 cup Brown Sugar
  • 1/2 cup Flax Meal
  • 1/4 cup Rice Flour
  • 1 cup Rolled Oats
  • 1 1/2 teaspoons Pure Vanilla Extract
  • 1 1/2 teaspoons Baking Powder
  • 2 Eggs
  • 4 tablespoons Coconut Oil Melted
  • 1/4 teaspoon Salt
  • 1/2 cup Pecan Pieces
  • 1/2 cup Chocolate Chips A mix of milk and semisweet if you like

Instructions

  • Preheat oven to 350°F.
  • Add peanut butter and brown sugar to a bowl and mix well.
  • Add in the flax, rice flour, oats, vanilla, baking powder, eggs, coconut oil, and salt and mix well.
  • Then add in the pecans and chocolate chips.
  • Scoop spoonfuls of cookie mix onto a parchment-lined baking tray.
  • Bake for 10 minutes — cookies will look undone but will be soft and perfect when cooled.
