Gluten Free Chocolate Chip Pecan Cookies are great for an afternoon snack or lunchbox treat. So, so good
- 1/2 cup Peanut Butter
- 2/3 cup Brown Sugar
- 1/2 cup Flax Meal
- 1/4 cup Rice Flour
- 1 cup Rolled Oats
- 1 1/2 teaspoons Pure Vanilla Extract
- 1 1/2 teaspoons Baking Powder
- 2 Eggs
- 4 tablespoons Coconut Oil Melted
- 1/4 teaspoon Salt
- 1/2 cup Pecan Pieces
- 1/2 cup Chocolate Chips A mix of milk and semisweet if you like
Get Recipe Ingredients
Preheat oven to 350°F.
Add peanut butter and brown sugar to a bowl and mix well.
Add in the flax, rice flour, oats, vanilla, baking powder, eggs, coconut oil, and salt and mix well.
Then add in the pecans and chocolate chips.
Scoop spoonfuls of cookie mix onto a parchment-lined baking tray.
Bake for 10 minutes — cookies will look undone but will be soft and perfect when cooled.
