These Chocolate Cherry Muffin Tops are ever so slightly crisp on the outside and soft on the inside. They are studded with chocolate chips and fresh cherries, and are a tasty portable breakfast or snack!
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1/3 tsp salt
- 1 tsp baking powder
- 1 egg
- 3 tbsp olive oil
- 4 tbsp almond milk
- 2 tsp pure vanilla extract
- 1/2 cup fresh cherries
- 1/2 cup chocolate chips (can use a mix of milk chocolate and semi sweet chocolate)
Get Recipe Ingredients
Preheat the oven to 375 degrees Fahrenheit.
Add the dry ingredients (all-purpose flour, sugar, salt, and baking powder) to a medium-sized glass bowl, and mix well.
Then add the wet ingredients (the egg, oil, almond milk, and vanilla) into the dry ingredients and mix well.
Remove the pit from the cherries, and cut them up into large chunks. Then add the cherry chunks to the batter.
Add the chocolate chips into the batter as well and mix well.
Add spoonfuls of batter onto a silpat lined baking tray, to make 4 muffin tops, gently shaping them as necessary.
Bake at 375 degrees for 18-20 minutes.
Remove from the oven, let cool, and enjoy!
