These Dubai Chocolate Stuffed Muffin Tops are a decadent portable snack or dessert. This is a small batch recipe that results in 4 Chocolate muffin tops that are stuffed with homemade Dubai Chocolate Cups.

Ingredients

Instructions

  • Start by gathering all ythe ingredients.
  • Then, preheat the oven to 375 degrees Fahrenheit or 190 degrees Celsius.
  • Add the dry ingredients such as almond flour, all-purpose flour, salt, baking powder, sugar, and cocoa powder to a medium bowl. Using a spoon or spatula, mix the dry ingredients together.
  • Then, add the wet ingredients such as egg, vanilla extract, almond milk, and olive oil to the dry ingredients and mix well. The batter will be quite thick. Do not try to thin it out. The thicker the batter, the more these muffin tops will dome.
Mixing in the wet ingredients - the dough wi be thick
  • Grab a baking pan and line it with a Silpat or parchment paper.
  • Add four large tablespoons of the batter to the silpat or parchment.
  • Then, add a frozen Dubai Chocolate Cup or bar on top of that tablespoon of batter.
  • Add another tablespoon or two of muffin top batter on top of the Dubai chocolate cup/bar.
Putting more muffin top batter over the Dubai Chocolate Cup
  • Using the back of the spoon or a butter knife, gently tease the batter on the top and bottom of the Dubai Chocolate cups, so the batter covers the Dubai Chocolate cup entirely.
Shaping Muffin Top Batter to be more domed in shape
  • Pop the baking pan into the oven and bake for 18 – 20 minutes.
  • Remove from the oven and let them cool down to room temperature. This gives the Dubai Chocolate cups time to solidify a bit so when you bite into these Dubai Chocolate Muffin Tops, the chocolate doesn’t melt everywhere.
  • Once cooled, these can be enjoyed as is or dressed up as described below.
  • Optional Serving suggestion: Slather on some pistachio butter on top. Then, melt some chocolate chunks in a microwave safe bowl or double boiler, and drizzle the melted chocolate on top. Then, sprinkle on some chopped pistachios and dig in!

Notes

  • The batter will be quite thick. Do not try to thin it out. The thicker the batter, the more these muffin tops will dome.
  • Make sure to use frozen Dubai Chocolate cups or pieces of a bar. This way, as the muffin tops bake, the Dubai Chocolate inside will retail it's shape and not melt and disappear into the muffin top.
