Made with only 9 ingredients, this easy Cabbage Salad with Lentils is a nutritious, tasty, low carb, and super quick meal your family is sure to enjoy.

Ingredients

  • 3 tbsp olive oil
  • 1 red onion
  • 4 cloves garlic
  • 1 inch piece of fresh ginger or 2 tsps grated ginger
  • 1 small green cabbage
  • 1 can lentils
  • 2 tsp coriander
  • 1 tsp smoked paprika
  • 2 tbsp peanuts spiced or lightly salted or your favorite
  • Handful of parsley
  • Salt and pepper to taste

Instructions

  • Peel and chop onion, ginger and garlic. 
  • Add oil to a pan and add in the red onion and saute 5 minutes over medium heat, stirring often so the onion doesn't burn.
  • While the onion cooks, chop the cabbage up roughly.
  • Also, drain and rinse the canned lentils.
  • Add in the garlic and ginger to the pan with the onion and saute about 4-5 minutes, stirring well
  • Add in the cabbage and the spices, stir well and saute about 10 minutes.
  • Add in the parsley and stir well. Remove from the heat and season with salt and pepper to taste.
  • Garnish with peanuts and more parsley of desired and enjoy!
