Made with only 9 ingredients, this easy Cabbage Salad with Lentils is a nutritious, tasty, low carb, and super quick meal your family is sure to enjoy.
- 3 tbsp olive oil
- 1 red onion
- 4 cloves garlic
- 1 inch piece of fresh ginger or 2 tsps grated ginger
- 1 small green cabbage
- 1 can lentils
- 2 tsp coriander
- 1 tsp smoked paprika
- 2 tbsp peanuts spiced or lightly salted or your favorite
- Handful of parsley
- Salt and pepper to taste

Peel and chop onion, ginger and garlic.
Add oil to a pan and add in the red onion and saute 5 minutes over medium heat, stirring often so the onion doesn't burn.
While the onion cooks, chop the cabbage up roughly.
Also, drain and rinse the canned lentils.
Add in the garlic and ginger to the pan with the onion and saute about 4-5 minutes, stirring well
Add in the cabbage and the spices, stir well and saute about 10 minutes.
Add in the parsley and stir well. Remove from the heat and season with salt and pepper to taste.
Garnish with peanuts and more parsley of desired and enjoy!
