Easy Carrot Cake Chia Pudding

If you are looking to jazz up your chia pudding, then this Carrot Cake Chia Pudding takes most of the ingredients that go into a traditional carrot cake and marry them harmoniously into chia pudding!

Ingredients

  • 1/4 cup black chia seeds
  • 1 cup almond milk
  • 3 Tbsp maple Syrup or sweetener of choice - adjusted to your taste
  • 3 Tbsp shredded carrot
  • 1/4 cup walnut pieces
  • 1/4 cup dates or raisins
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp ginger
  • 1/8 tsp cloves
  • 1/4 tsp sea salt
  • 1/4 tsp almond extract
  • 1 tsp vanilla extract

Topping

  • Greek yogurt maple syrup, walnuts, dates, shredded carrots

Instructions

  • If using dates, cut them into small pieces.
  • Then add the almond milk, chia seeds, shredded carrot, maple syrup, sea salt, cinnamon, cardamom, ginger, cloves, vanilla extract, almond extract, chopped dates, and walnuts into a large bowl and stir well.
  • Divide this into 2 individual containers or mason jars.
  • Place a lid on and store in the fridge for at least 4 hours.
  • When ready to enjoy, top with a dollop of Greek yogurt, sprinkle with some cinnamon and drizzle on maple syrup, along with walnuts, dates, and shredded carrots.
