These Easy Oven Roasted Carrots are a delicious side dish made with only 5 ingredients and ready in 30 minutes.

Ingredients

  • 1/4 cup Extra Virgin Olive Oil
  • 1 tsp Smoked paprika
  • 2 tsp Harissa
  • 1 tsp Onion Powder
  • 8 Carrots (medium sized)
  • salt and pepper (to taste)
  • 2 tbsp fresh parsley chopped OPTIONAL

Instructions

  • Gather all the ingredients.
  • Preheat the oven to 425 degrees Fahrenheit.
  • While the oven is preheating, rinse the carrots to remove any debris.
  • Then place the carrots in a single layer and spread out on a baking sheet or an oven safe pan.
  • Mix together the olive oil, harissa, smoked paprika, and onion powder in a small bowl.
  • Use a pastry brush or, simply spoon on this spiced oil mixture onto the carrots. Toss the carrots around so they are fully covered with the spiced oil mixture.
  • Place the baking sheet or oven safe pan with the carrots in the preheated oven and let the carrots bake, undisturbed for 20-25 minutes or until they are tender.
  • Remove the carrots from the oven and season with seas salt and black pepper to taste.
  • Sprinkle the roasted carrots with some chopped fresh parsley before serving.
