  • Peel and dice the onion and the garlic cloves.
  • Heat 2 tablespoons of oil in a large skillet over medium heat.
  • Add the diced onion and sauté for 8–10 minutes, stirring occasionally, until soft and lightly caramelized.
  • Stir in the minced garlic and cook for 30 seconds until fragrant.
  • Add the frozen jackfruit to the pan, along with the coriander, smoked paprika, turmeric, cayenne, and cumin. Stir.
  • Reduce the heat to medium-low. Cover the pan and cook for 5 minutes, allowing the jackfruit to warm, soften, and absorb the flavors.
  • Pour in the coconut milk and stir. Let it simmer uncovered for another 1-2 minutes until slightly well combined.
