Peel and finely dice the onion and ginger.
Then, rinse the strawberries well. Discard any discolored parts. Chop off the stems. Then, dice the strawberries finely as well.
Add the oil to a medium-sized pan and place it over a stovetop set to medium heat.
Add the peeled and diced onion and ginger, and saute them for about 5 minutes, stirring often
Then, add in the strawberries, the spices, the zero-calorie sweetener, and the vinegar, and stir the mixture well.
Turn the stove to low heat.
Cover the pan with a lid and let this mixture simmer for about 10 minutes.
Remove the lid; the liquid in the pan should have reduced at this point. Stir the strawberry chutney well, and take the pan off the stove.
Let the strawberry chutney cool. Then, place the chutney in glass jars, secure their lids tightly, and store them in the refrigerator.
