This refreshing and easy Watermelon Salad with Feta and Basil is perfect for a hot summer day. Packed with hydrating watermelon cubes, tangy feta cheese, fresh basil leaves, and a delicious honey orange vinaigrette, this is a tasty and quick salad to whip-up for gatherings with family and friends.
For the Honey Orange Vinaigrette
- 2 tbsp Extra virgin olive oil
- 2 tbsp Red wine Vinegar
- 2 tbsp Orange juice
- 1/4 tsp Orange zest
- 1/2 tsp Salt
- 1 tsp Oregano
- 1 tbsp Honey
For the Salad
- 3 cups Watermelon (2 cups yellow watermelon and 2 cups red watermelon)
- 2 cups Greens
- 1/4 cup Feta
- 3 tbsp Fresh Basil (chopped up)
- Honey Orange Vinaigrette

For the Honey Orange Vinaigrette
Squeeze the orange to get 2 tbsp and add them to a small bowl.
Use a microplane grater and grate the orange to get 1/4 tsp of zest, being careful to avoid the bitter white part of the orange. Add the orange zest to the small bowl as well.
Then add in the salt, red wine vinegar, olive oil, honey, and oregano and stir well until all ingredients are well combined, then set aside.
Assemble the salad
Add the greens to a large bowl
Cut the watermelon into bite-sized cubes and add them to the bowl with the greens.
Drizzle on the honey orange vinaigrette and toss to coat.
Sprinkle on the feta and chopped basil and enjoy cold.
