Tasty, quick, and nutritious, this skillet of loaded cauliflower hash browns is a delicious meal any time of the day!

Ingredients

  • 5-6 Strong Roots Cauliflower Hash Browns
  • 1/2 cup chopped red cabbage
  • 1/2 cup frozen corn thawed
  • 1/4 cup canned sliced mushrooms
  • 1/2 cup canned black beans - drained and rinsed
  • 1/2 an avocado
  • 2-3 tbsp. salsa
  • To garnish - chili flakes parsley

Instructions

  • Bake 5-6 Strong Roots Cauliflower Hash Browns. (For the Hash Browns, heat your oven to 400ºF and bake in a single layer for 15–17 minutes, flipping once while cooking. For Mixed Veggie Fries, bake in a single layer for 20–25 minutes, turning once while cooking).
  • When baked, layer them with chopped purple cabbage,
  • Then throw on some thawed out, frozen corn,
  • Layer on some canned sliced mushrooms - or fresh ones,
  • Layer on some chopped avocado and black beans
  • And, finally some salsa, chili flakes, and parsley
