- 5-6 Strong Roots Cauliflower Hash Browns
- 1/2 cup chopped red cabbage
- 1/2 cup frozen corn thawed
- 1/4 cup canned sliced mushrooms
- 1/2 cup canned black beans - drained and rinsed
- 1/2 an avocado
- 2-3 tbsp. salsa
- To garnish - chili flakes parsley

Bake 5-6 Strong Roots Cauliflower Hash Browns. (For the Hash Browns, heat your oven to 400ºF and bake in a single layer for 15–17 minutes, flipping once while cooking. For Mixed Veggie Fries, bake in a single layer for 20–25 minutes, turning once while cooking).
When baked, layer them with chopped purple cabbage,
