This matcha chia seed pudding with yogurt and fresh strawberries is ultra-creamy, naturally vibrant, and protein-packed. High in fiber and antioxidants, this pudding is perfect for meal prep for busy mornings or an afternoon snack.

  • In a medium bowl, whisk together the soy milk and the matcha powder first until matcha is well blended.
  • Add in the chia seeds, Greek yogurt, almond extract, vanilla, and your sweetener of choice and give the mixture a good stir.
  • Cover and place in the fridge for at least 2 hours. After the first 30 minutes, give it one more stir to prevent the seeds from settling at the bottom.
  • Spoon the thickened pudding into glasses, mason jars, or bowls, layering with fresh, juicy strawberry slices and ENJOY!
