Made with just 10 ingredients, these gluten-free Mocha Breakfast Cookies are delicious and nutritious! They are great for breakfast or as a snack when you need a pick-me-up!
- 2 cups GF oats ground I ground my oats using my blender
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup cocoa
- 1/2 cup brown sugar
- 3 teaspoons instant coffee
- 2 eggs
- 4 tablespoons almond oil
- 3/4 cup dark or semi sweet chocolate chips
- 1/2 cup dark chocolate chips melted optional
- 2 teaspoons hemp seeds optional

Preheat oven to 350
In a large bowl, add in all the dry ingredients - the oats, salt, baking powder, cocoa, brown sugar, and coffee and mix well
Make a well in the middle and add the eggs and almond oil and mix till the mixture resembles dough
Add in the chocolate chips
Break off tablespoon-sized pieces of dough and roll them into circular cookies
Bake for 15 minutes
When cooled, dip in melted chocolate and sprinkle with hemp - but this is optional
