This Radish Sausage Quinoa Salad is not only easy to pull together, but it doesn’t require any elaborate measurements either - and it is such a delightful combination of flavors and textures!
- 2 tbsp olive oil
- 1 red onion chopped
- 4 cloves garlic chopped
- 6-7 radishes washed and sliced
- 3 stalks celery washed and sliced too
- 1/2 cup quinoa cooked
- Eckrich Jalapeno & Cheddar Smoked Sausage Links

- 1/2 lime

Add olive oil to a pan and when the oil is slightly warm, add in the onions and saute about 10 minutes, stirring often.
While onions are sauteing, wash and slice radishes and celery.
Slice Eckrich Jalapeno & Cheddar Smoked Sausage. When the onions are translucent around the 10 minute mark, push the onions to the side of the pan with your spatula and add in the sliced Eckrich Jalapeno & Cheddar Smoked Sausage Links. Let sausage slices brown for about 3 minutes, then flip and let saute another 3 minutes.
Add in the radishes and celery as well as garlic and stir well. Let saute about 2-3 minutes so veggies stay crispy.
Add in the cooked quinoa and stir well until all ingredients are well incorporated.
Season with pepper, squeeze a bit of lime onto quinoa and sausage mix and enjoy with a cucumber salad.
