This 10-Minute Warm Vegetable Stew is an easy recipe to make and enjoy on a busy night. This vegetarian dish is filling, versatile, and so comforting with some crusty bread.
- Olive Oil
- 3 cloves garlic chopped
- 1/2 red onion chopped
- 1 inch piece of ginger chopped
- 1 green bell pepper chopped
- 1 pouch Libby's Sweet Corn
- 1 cup Libby's peas
- 1/2 cup Libby's beans
- 1/2 cup black beans
- 1 cup 100% pumpkin puree
- 4 tablespoons tomato paste
- 1 teaspoon cumin powder
- 1/2 teaspoon cayenne powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon turmeric powder
Get Recipe Ingredients
Saute onion, garlic and ginger in a pan with olive oil over high heat about 7 minutes.
Add chopped bell pepper and stir for 1 minute.
Heat Libby's pouches for 45 seconds and add listed quantities to the pan.
Add black beans, pumpkin puree, tomato paste, cumin, cayenne, chili and turmeric and stir for about a minute.
Enjoy with crusty bread or straight up!
