Studded with chooclate chips, this Chocolate Pecan Protein Loaf makes for a delicious and protein packed mid afternoon snack.

Ingredients

  • 1 cup Premier Protein Chocolate Protein Powder
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil melted
  • 3 eggs
  • 3/4 cup almond milk or milk of your choice
  • 2 teaspoons baking powder
  • 1/4 cup good quality dark chocolate chunks I used 72% cacao for this
  • 1/4 cup pecan pieces
  • 1/4 cup milk chocolate or semi-sweet chocolate chips
  • TO SPRINKLE ON TOP
  • 2 tablespoons good quality dark chocolate chunks I used 72% cacao for this
  • 2 tablespoons pecan pieces
  • 2 tablespoons milk chocolate or semi-sweet chocolate chips

Instructions

  • Preheat oven to 350
  • Line a loaf pan with parchment paper and set aside
  • Combine Premier Protein Chocolate Protein Powder, coconut flour and baking powder in a bowl.
  • Using a whisk, mix in coconut oil, eggs (1 at a time) and almond milk (or milk of your choice)
  • Toss in the 1/4 cup dark chocolate chunks, 1/4 cup pecan pieces and 1/4 cup milk chocolate or semi-sweet chocolate chips into bowl and then pour mixture into loaf pan
  • Bake for 34-40 minutes till toothpick inserted in center comes out clean.

Then, you can melt some of the chocolate or simply sprinkle loaf with:

  • 2 tablespoons good quality dark chocolate chunks (I used 72% cacao for this)
  • 2 tablespoons pecan pieces
  • 2 tablespoons milk chocolate or semi-sweet chocolate chips
  • And serve
