Studded with chooclate chips, this Chocolate Pecan Protein Loaf makes for a delicious and protein packed mid afternoon snack.
- 1 cup Premier Protein Chocolate Protein Powder
- 1/4 cup coconut flour
- 1/4 cup coconut oil melted
- 3 eggs
- 3/4 cup almond milk or milk of your choice
- 2 teaspoons baking powder
- 1/4 cup good quality dark chocolate chunks I used 72% cacao for this
- 1/4 cup pecan pieces
- 1/4 cup milk chocolate or semi-sweet chocolate chips
- TO SPRINKLE ON TOP

- 2 tablespoons milk chocolate or semi-sweet chocolate chips

Preheat oven to 350
Line a loaf pan with parchment paper and set aside
Combine Premier Protein Chocolate Protein Powder, coconut flour and baking powder in a bowl.
Using a whisk, mix in coconut oil, eggs (1 at a time) and almond milk (or milk of your choice)
Toss in the 1/4 cup dark chocolate chunks, 1/4 cup pecan pieces and 1/4 cup milk chocolate or semi-sweet chocolate chips into bowl and then pour mixture into loaf pan
Bake for 34-40 minutes till toothpick inserted in center comes out clean.
Then, you can melt some of the chocolate or simply sprinkle loaf with:
2 tablespoons good quality dark chocolate chunks (I used 72% cacao for this)
2 tablespoons pecan pieces
2 tablespoons milk chocolate or semi-sweet chocolate chips
And serve
