Chipotle pepper, cumin, and adobo sauce add a punch flavor to this Chipotle Almond Hummus. This creamy and light hummus is tahini-free and totally delicious as a dip or spread.

Ingredients

  • 1/4 cup water
  • 1/2 cup Blue Diamond Honey Roasted Chipotle almonds
  • 1 cup garbanzo beans - skinned
  • 1/4 teaspoon cumin
  • 1 chipotle pepper in adobo sauce
  • 2 teaspoons olive oil
  • 1/3 cup water
  • juice of half a lemon

Instructions

  • Add the quarter cup of water and 1/2 cup of almonds to a saucepan and bring to a boil.
  • Lower the heat and let simmer for 10 minutes.
  • Turn off the heat and let cool
  • Add the cooled almonds and water to a blender or food processor and pulse till almonds are ground up.
  • Add the garbanzo beans, the cumin, the chipotle pepper in adobo sauce, the oilve oil and remaining 1/3 cup water and lemon juice and pulse till mixture is smooth and creamy.
  • Enjoy with pita chips and/or vegetables
