Add the gluten-free flour to a bowl
Then, using a fork, mix in / cut in the hard (not melted) coconut oil
Then add in the buttermilk and mix till well incorporated
Add in the smoked Gouda, the rosemary, the salt and pepper and, using you hands, mix till well incorporated
Wrap in plastic wrap and chill for 30 minutes to an hour
Remove and place on a lightly floured surface
Preheat oven to 400 degrees
Roll dough out, and using a cookie cutter, cut desired shapes out of it. Then, using a fork or toothpick make indents in center.
Bake in oven (preheated to 400 degrees) for 15 minutes
Let cool and then place in Honey Maid Graham cracker house to serve.
