Spicy Roasted Chicken & Vegetables Gluten Free Chocolate Ricotta Cookies

A tasty, filling, comforting and mood-lifting, Garam masala and paprika infused Spicy Roasted chicken with potatoes and vegetables - perfect for movie night

Ingredients

  • 2 tablespoons of garam masala
  • 2 tablespoons of paprika
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 10 free range Chicken drumsticks
  • 3 + 2 tablespoons of olive oil
  • 3 chopped carrot
  • 1/2 a chopped head of purple cauliflower
  • 10 fingerling potatoes halved
  • 1 chopped red onion
  • 5 cloves of garlic
  • 1 cup gluten free flour
  • 1/3 cup coconut sugar
  • 1 teaspoon baking powder
  • 2 tablespoons unsweetened cocoa powder
  • a pinch of salt
  • 1/4 cup melted coconut oil
  • 1 egg
  • 1/2 cup ricotta cheese
  • 1/4 cup mini semi-sweet chocolate chips

Instructions

  • Preheat oven to 375
  • Mix up the spice rub by placing 2 tablespoons of garam masala, 2 tablespoons of paprika, 1 teaspoon of salt, and 1 teaspoon of pepper in a bowl.
  • Then place 10 free range Chicken drumsticks in a roasting pan and drizzle 3 tablespoons of olive oil on them, then them with half the spice mix.
  • Place 3 chopped carrots, 1/2 a chopped head of purple cauliflower, 10 fingering potatoes (halved), 1 chopped red onion and 5 cloves of garlic into the spice bowl, drizzle them with 2 tablespoons of oil and then mix the rest of the spice mix into them, before arranging them around the chicken.
  • Cover the pan with foil and place it in an oven that had been preheated to 375 degrees. let this bake for 30 minutes.
  • Then remove the foil covering the chicken and veggies and let it bake at 375 degrees for another 30 minutes.
  • Preheat oven to 350
  • Mix 1 cup gluten free flour, 1/3 cup coconut sugar, 1 teaspoon baking powder, 2 tablespoons unsweetened cocoa powder, a pinch of salt, 1/4 cup melted coconut oil, 1 egg, 1/2 cup ricotta cheese together till well incorporated.
  • Then add in 1/4 cup mini semi-sweet chocolate chips
  • Roll into 9 balls, flatten them, before placing them on a parchment lined baking tray and baking them in an oven (that had been preheated to 350 degrees) for 10 minutes.
  • Let the cookies cool as they tend to get sweeter as they cool.
