CREPES
In a large bowl, mix the flour, eggs, Premier Protein Vanilla, Shake, water, and salt with a whisk and a whole lot of elbow grease! Mix till batter is creamy and lump-free
Then whisk in the melted coconut oil
Place a pan over medium heat and grease it with coconut oil
Add a ladlefull of batter to pan and twirl pan around so batter coats bottom of pan in a thin layer
Flip and let cook about 30 seconds and transfer to a plate
Repeat with the rest of the butter
APPLE PUMPKIN FILLING
Add coconut oil to the same pan and add in the apple, coconut sugar, salt, pumpkin puree, vanilla and pumpkin pie spice and let cook till apple softens - stirring often
Add the Premier protein shake and stir till excess liquid is evaporated
Place a couple of tablespoons of batter in each crepe and roll and enjoy
Can be enjoyed with plain syrup or pumpkin syrup
