Sri Lankan Fruit Salad with Whipped Vanilla Coconut Topping

A refreshing and delightful blend of fruits, topped with a whipped vanilla coconut topping, makes for one heck of a dessert!

Ingredients

  • 1 ripe pineapple
  • 1 ripe papaya
  • 2 ripe mangoes
  • 2 kiwi
  • 2 bananas
  • 1 vanilla pod
  • 1 can refrigerated full fat coconut milk

Instructions

  • Chop the pineapple, papaya, mangoes, kiwi, and bananas and place in a bowl
  • Let sit for about an hour so all the fruit juices mingle
  • While waiting, open the refrigerated can of coconut milk and scoop the semi-solid part that has risen to the top, while discarding the water
  • Place this coconut in a bowl and scoop out the vanilla beans from one pod and place in the same bowl
  • Using an electric mixer, whip till well incorporated
  • Divide fruit into bowls
  • Dollop whipped vanilla coconut topping on top off ruit and enjoy
