Vanilla Infused Fried Rice

Ingredients

  • 1 red onion chopped
  • 3 cloves garlic chopped
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 1 orange pepper chopped
  • 3 eggs
  • 1 tablespoon Tamari sauce
  • 1 teaspoon paprika
  • 2 cups kale
  • 1/2 cup cannellini beans
  • 2 cups Vanilla Infused Rice
  • Olive Oil

Instructions

  • Add olive oil to coat the bottom of a frying pan or wok
  • Add the onion and garlic and saute about 15 minutes, stirring constantly
  • Add the peppers and saute another 5 minutes, make a well in the middle of the peppers
  • And, add the eggs and stir till cooked through
  • Add the Vanilla Infused Rice and Tamari and paprika and stir till mixed through
  • Add the kale and cannellini beans and let cook for about 5 more minutes, stirring frequently
  • Serve warm
  • **Nuts would make a wonderful topping**
