Made with just 10 ingredients, these gluten-free Mocha Breakfast Cookies are delicious and nutritious! They are great for breakfast or as a snack when you need a pick-me-up!

Ingredients

  • 2 cups GF oats ground I ground my oats using my blender
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup cocoa
  • 1/2 cup brown sugar
  • 3 teaspoons instant coffee
  • 2 eggs
  • 4 tablespoons almond oil
  • 3/4 cup dark or semi sweet chocolate chips
  • 1/2 cup dark chocolate chips melted optional
  • 2 teaspoons hemp seeds optional

Instructions

  • Preheat oven to 350
  • In a large bowl, add in all the dry ingredients - the oats, salt, baking powder, cocoa, brown sugar, and coffee and mix well
  • Make a well in the middle and add the eggs and almond oil and mix till the mixture resembles dough
  • Add in the chocolate chips
  • Break off tablespoon-sized pieces of dough and roll them into circular cookies
  • Bake for 15 minutes
  • When cooled, dip in melted chocolate and sprinkle with hemp - but this is optional
