Black Lentil Soup

Ingredients

  • 2 red onions chopped
  • 1 inch piece of ginger chopped
  • 1 inch piece of fresh turmeric chopped
  • 6 cloves garlic chopped
  • 3 celery stalks chopped
  • 1 cup black lentils
  • 3 cups vegetable stock
  • Salt and pepper
  • Paprika
  • Cumin
  • 2 tablespoons 100% pumpkin puree
  • Parsley

Instructions

  • Saute the onions, garlic, ginger and turmeric till onion caramelizes (approx 15 - 20 minutes)
  • Add the celery and saute
  • Then add the black lentils, pumpkin, spices and vegetable stock and bring to a boil, then lower heat and let simmer for 25 minutes.
