Light and delicious, these texture-rich, Strawberry & Banana Chia Pudding Parfaits (with granola) can be enjoyed for dessert or even breakfast!

Ingredients

For The Strawberry & Banana Chia Pudding Parfait

  • 2 tropical banana medley Outshine® bars
  • 1 cup milk
  • 2 tablespoons agave
  • 4 whole strawberris + 4 strawberries cut into little chunks
  • 13 cup chia seeds
  • 1 banana sliced

For homemade Granola

  • 2 cups rolled oats
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 2 tablespoons brown sugar
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon cinnamon
  • 2 tablespoons flaked almonds

Instructions

For The Strawberry & Banana Chia Pudding Parfait

  • Add the tropical banana medley Outshine® bars, milk, and agave, and 4 strawberries to a blender and blend till smooth
  • Then pour into a bowl and stir in the chia seeds
  • Refrigerate this Strawberry & Banana Smoothie/Chia mix for at least 4 hours
  • When set, alternate layers of Strawberry & Banana Chia Pudding mix with granola (homemade granola recipe below) and strawberries and fresh sliced bananas in parfait bowls.

For homemade Granola

  • Preheat oven to 300 degrees.
  • Mix rolled oats, coconut oil, honey, brown sugar, cardamom, almond extract, cinnamon, and flaked almonds together in a bowl.
  • Then spread out on a baking tray and bake for 15 minutes. Then, mix/flip granola and bake another 15 minutes. Then let cool and break apart when cool.
