Light and delicious, these texture-rich, Strawberry & Banana Chia Pudding Parfaits (with granola) can be enjoyed for dessert or even breakfast!
For The Strawberry & Banana Chia Pudding Parfait
- 2 tropical banana medley Outshine® bars
- 1 cup milk
- 2 tablespoons agave
- 4 whole strawberris + 4 strawberries cut into little chunks
- 13 cup chia seeds
- 1 banana sliced
For homemade Granola
- 2 cups rolled oats
- 1/4 cup coconut oil
- 1/4 cup honey
- 2 tablespoons brown sugar
- 1/4 teaspoon cardamom
- 1/4 teaspoon almond extract
- 1/2 teaspoon cinnamon
- 2 tablespoons flaked almonds

For The Strawberry & Banana Chia Pudding Parfait
Add the tropical banana medley Outshine® bars, milk, and agave, and 4 strawberries to a blender and blend till smooth
Then pour into a bowl and stir in the chia seeds
Refrigerate this Strawberry & Banana Smoothie/Chia mix for at least 4 hours
When set, alternate layers of Strawberry & Banana Chia Pudding mix with granola (homemade granola recipe below) and strawberries and fresh sliced bananas in parfait bowls.
For homemade Granola
Preheat oven to 300 degrees.
Mix rolled oats, coconut oil, honey, brown sugar, cardamom, almond extract, cinnamon, and flaked almonds together in a bowl.
Then spread out on a baking tray and bake for 15 minutes. Then, mix/flip granola and bake another 15 minutes. Then let cool and break apart when cool.
