You know you want these delicious, gluten free, Matcha & Banana Protein Crepes for breakfast tomorrow - psst, they are super easy to pull together!

Ingredients

Crepes

  • 1 cup rice flour
  • 2 eggs
  • 1 cup Premier Protein Bananas & Cream Shake
  • 1/3 cup water
  • pinch of salt
  • 1 teaspoon almond extract
  • 2 tablespoons butter
  • 2 teaspoons Matcha powder

Apple Pecan Filling

  • 2 apples
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon almond
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • pinch of salt
  • 2 tablespoons brown sugar
  • 2 tablespoons pecan pieces
  • 1 tablespoon Premier Protein Bananas & Cream Shake
  • 1 tablespoon coconut oil

Instructions

Crepes

  • Add all the ingredients into a blender and whirl it on high for 15-20 seconds
  • Then pour a ladle-full onto a hot pan, swirl it around as best as you can and let cook for 2 minutes approximately, flip and let cook 30 seconds or so and slide off pan
  • Repeat till batter is over

Apple Pecan Filling

  • Peel apples and cube, then add to a saucepan with coconut oil
  • Add spices and brown sugar and let cook till apples are tender (10 minutes or so)
  • Add in Premier Protein Bananas and Cream shake and pecan pieces and fill crepe
