Place the ground up gluten free oats, coconut flour, and salt in a bowl and stir a bit.
Add in the caramel sauce (you can use homemade or store bought), coconut oil, vanilla extract and mini chocolate chips and stir well.
Gather the mixture into balls sized according to your preference, and roll and shape them up gently.
Then place them in the fridge to chill for about 20 minutes.
Meanwhile, melt the white chocolate and semi sweet chocolate.
