Preheat oven to 350
Spray a 9 x 9 baking tray with oil, line it with some parchment paper and spray that lightly as well and set aside.
Meanwhile, place Bob's Red Mill almond flour, Bob's Red Mill gluten free 1-1 flour, medjool dates, brown sugar (optional), coconut oil, salt, eggs, baking powder in a blender and blend till well incorporated.
Using a spatula, fold in the apple chips, almonds, and almond extract.
Pour mixture into parchment lined baking tray and bake for 30 - 32 minute at 350 degrees F.
