Nutty Sweet Potato Breakfast Bars

Ingredients

For the base

  • 1 cup rolled oats
  • 3/4 cup almond meal
  • 2 medium sweet potatoes baked, peeled and mashed well
  • 1 tsp pumpkin pie spice
  • 2 eggs
  • 4 dates soaked in warm water for 10 minutes
  • 3/4 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 tbsp coconut oil
  • 1/2 tsp salt
  • 1 + 1 cup Honey Bunches of Oats Cereal
  • 1/2 cup caramel chips optional

Cereal Streusel topping

  • 1 cup Honey Bunches of Oats Cereal
  • 2 tbsp coconut oil
  • 1 tsp pumpkin pie spice
  • 3 tbsp brown sugar

Instructions

  • Preheat oven to 350 degrees. Line a 9x9 baking tray with parchment and set aside.
  • Meanwhile, add oats, almond meal, sweet potatoes, pumpkin pie spice, salt, eggs, dates, brown sugar, vanilla and almond extract, and coconut oil to a blender and blend till well incorporated. 
  • Using a spatula stir in Honey Bunches of oats as well as caramel chips (optional) and spoon mixture into baking tray.
  • Add the other cup of Honey Bunches of Oats Cereal, coconut oil, brown sugar and pumpkin pie spice into a bowl and mix well. Then, sprinkle it onto the sweet potato cereal base.
  • Bake for 30 minutes. Let cool, cut into squares and enjoy.
