Simple Cumin & Coriander Spiced Tofu & Veggie Bowl

Ingredients

  • 3 tbsp olive oil
  • 1 red onion diced
  • 2 cloves garlic smashed and diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1/2 cup frozen peas
  • 1 block extra firm tofu dried well and cubed
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • cilantro to garnish
  • 1/2 cup cooked brown rice
  • 1/2 sauteed in olive oil and salt and pepper and diced beet
  • 1/2 an avocado diced
  • 2 boiled eggs diced

Instructions

  • Add olive oil to a pan and add red onion and saute for about 15 minutes, stirring constantly.
  • Add in garlic, tofu, cumin, coriander, paprika and saute till tofu is well cooked and browned.
  • Toss in carrots, peas and celery and cook a couple of minutes.
  • Season with salt and pepper and garnish with cilantro.
  • Serve with cooked brown rice, sauteed beets, boiled eggs, and avocado.
