Add olive oil to a pan and add red onion and saute for about 15 minutes, stirring constantly.
Add in garlic, tofu, cumin, coriander, paprika and saute till tofu is well cooked and browned.
Toss in carrots, peas and celery and cook a couple of minutes.
Season with salt and pepper and garnish with cilantro.
Serve with cooked brown rice, sauteed beets, boiled eggs, and avocado.
