Crispy Yet Gooey Chocolate Peppermint Cherry Cookies

Gooey in the middle and slightly crispy on the outside, these Chocolate Peppermint Cherry Cookies would be a lovely treat for your next holiday cookie party, or just because!

Ingredients

  • 1 1/4 sticks unsalted butter
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 cup Hershey Dark Chocolate Powder
  • 3/4 cup White Chocolate Peppermint Chips
  • 1/4 cup maraschino cherries - chopped

Instructions

  • Cream butter, brown sugar and granulated sugar together using an electric handheld mixer.
  • Then add in the egg and vanilla extract and cream together.
  • Add in the Hershey Dark Chocolate Powder, all purpose flour, baking powder, baking soda and salt and mix well.
  • Add in the White Chocolate Peppermint Chips and maraschino cherries.
  • Then chill the cookie dough for at least a couple of hours (the more chilled the dough, the less spread) 
  • When dough is chilled, preheat oven to 375 degrees, form dough into rough balls and bake on a parchment lined baking tray for 10-11 minutes. Let cool completely and enjoy.
